Burrito Filling

2 chicken breast cubed
1 lbs. country sausage
1 red onion
11/2 cup carrots, diced
1/2 cup celery, diced
1 can diced tomatoes
1 can chicken broth
2 cans white beans

Directions:
Cook sausage, red onion and chicken cook until done.  Add carrots, and celery cook until soft.  Drain white beans from cans.  Add beans, and tomatoes to mixture.  Add broth if liquid is needed. 

Kung Pao style Chicken

Olive oil (enough to fry chicken in)
4 packages top ramen noodles
2 chicken breast cubed
1 cup frozen green peas
1/2 cup chopped almonds (use food processor)
21/2 cups chicken broth
Sauce:
2 tsp. minced garlic
2 tsp. fresh pressed ginger
1 T. peanut butter
1T. honey
1 T. rasberry balsamic vinegar
4T. soy sauce
1 T. rice vinegar
1-2 T. brown sugar
Directions:
fry chicken add chicken broth, peas, break noodles and cook for two minutes until noodles are soft.  Add sauce wait until boil out any unwanted moisture and then add almonds. Serve (the children enjoyed)
