Chicken, Red bell pepper Chow mien Salad

1 red bell pepper cubed (small setting big mouth)
1 cucumber peeled and seeded cubed (small setting big mouth)
1/4 cup red onion, finely chopped (small setting big mouth)
1/2 cup carrots cubed (small setting big mouth)
2 grilled chicken breast cubed
1 1/2 cup chow mien noodles (crunchy)
Cesar dressing or any favorite

Ham and Cheese Quiche


  • 3/4 cup cubed ham
  • 1 (8 or 9-inch) premade pie shell (Pillsbury is good)
  • 1 1/2 cup cheddar cheese (shredded)
  • 3 eggs
  • 1 cup milk
  • 1 teaspoon all-purpose seasoning


Preheat oven to 400 degrees F.

Cover the bottom of the premade pie with  ham, and cheese. Place on a baking sheet.

In a medium bowl, mix together eggs, milk, and seasoning and pour into the pie shell.

Place quiche into preheated oven for 35 to 40 minutes or until eggs have set.

Quinoa Crazin Salad

Salad:
1- 12 oz. box quinoa cooked and cooled
1 red bell pepper chop using big mouth
2 slices of red onion about 1/4 cup
1 can drained and rinsed black beans
1 cup frozen corn
1 cup crazins
Dressing:
1/2 cup honey
1/2 cup rasberry balsalmic vinegar
1/2 tsp. salt
freash mint if desired.

Directions:
I used the rice cooker to cook quinoa and works great.  Chop red peeper and onion mix all ingredients together.  Taste Great.
